Ingredients

½PoundFresh Maine or Dungeness Lump Crabmeat
¼CupBest-Quality Mayonnaise (or Tangerine Aioli--see Grilled Asparagus with Tangerine Aioli)
CupDried Bread Crumbs (preferably panko crumbs)
1CupAll Purpose Flour
1TablespoonTabasco (or other Hot Pepper Sauce)
2TablespoonScallions (thinly sliced)
TablespoonsRed Bell Pepper (finely dliced)

2TablespoonsFresh Lemon Juice

Avocado Salsa

Large Avocados (pitted, peeled, and cut into chunks)
1TablespoonFresh Lime Juice
3TablespoonsRed Onion (finely diced)
1TablespoonFresh Cilantro (chopped, plus whole sprigs for garnish)
1TablespoonExtra-Virgin Olive Oil
¼TeaspoonKosher Salt




Mango Coulis

Mangos (cut into chunks--see note)

1TeaspoonConfectioners' Sugar

Instructions

In a deep saute pan, heat 1 cup of the canola oil over high heat until a deep-frying or candy thermometer reads 375°F. In a bowl, combine the crabmeat, onion, scallions, bell pepper, mayonnaise, Tabasco, 1/4 cup of the bread crumbs, the lemon juice, and Worcestershire sauce. Mix until fully incorporated. Form into cakes about 3 inches in diameter and 3/4 inch thick. Place the flour on a plate, and stir in the salt and pepper. Place the beaten egg in a bowl and the remaining 1 cup bread crumbs on another plate. Dredge each crab cake in the flour, then in the egg, and then in the bread crumbs. Lay the cakes in the oil and panfry until each cake has a nice brown crust on both sides, 5 to 6 minutes total. Transfer to paper towels to drain.

To Make the Salsa:
Combine all the ingredients in a bowl, mixing gently. I like this have bright green chunks of avocado (which the lime juice keeps from turning brown), rather than to be a smooth guacamole concoction. Refrigerate the salsa until ready to use.

To Make the Mango Coulis:
Place the mango chunks in blender with 1 1/2 cups water and the confectioners' sugar. Process until smooth. If the mixture is too thick, pour in another 1/4 cup water, and again check the consistency, adding up to another 1/4 cup water if necessary. Refrigerate the coulis until ready to use.

To Serve:
Spoon coulis into the center of individual plates in a small bowl. Slice each crab cake in half to make two round pieces and lay the bottoms in the puree. Spoon some avocado salsa on top of each and place the top portions of the crab cakes over the salsa like a sandwich. Top with a small amount of salsa and garnish with cilantro sprigs.

Cat's Note:
I've found the easiest way to cut a mango is to cut a fat slice off each side, moving your knife parallel to the broad side of the pit inside. You'll have mango thirds, with the two outer thirds free of the pit. With a sharp knife cut a checkerboard pattern in the flesh of the two outer thirds, slicing first in one direction and then the other without cutting through the skin. Then flip the mango piece inside out so the cut side is curving outward. You'll find the crosshatching you've done makes the chunks stand out so they're easy to cut away from the skin with a knife.

Ingredients

  • 2 tbsp olive oil
  • 2 cups diced onions
  • 5 cloves garlic, minced
  • 1/2 chile pepper, seeded and diced
  • 1 (2x1-inch) hunk of fresh ginger, peeled and minced
  • 3 tbsp Madras-style curry powder
  • 1 tsp ground cumin
  • 1/4 tsp cayenne
  • 1/4 tsp ground turmeric
  • 1 tsp salt
  • 1 cup dried chickpeas, soaked overnight and boiled until tender
  • 4 8-inch whole wheat tortillas
  • arugula

Directions

1. Heat the oil in a deep skillet over medium heat. Add the onions and cook until translucent and softened, about 8 minutes. Add the garlic, chile pepper and ginger. Cook for 2 minutes, stirring frequently. Add the curry powder, ground cumin, cayenne, turmeric, and salt. Stir well. It will have a paste-like consistency.
2. Add the chickpeas plus enough water to barely cover (about 3 cups) to the pan. Bring to a lively simmer, then lower the heat and cook at a gentle simmer, stirring occasionally, until most of the liquid evaporates and the sauce thickens, about 50-60 minutes.
3. Taste for salt and seasoning.
4. Place 1/4 of the chickpea mix inside a warmed tortilla. Top with a large handful of arugula and fold into a wrap.


Ingredients:
  • 12 ounces strawberries, hulled and cut into 1/4-inch pieces (2 cups)
  • 2 teaspoons fresh lemon juice
  • 1/2 cup plus 2 tablespoons sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon lemon zest
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons cold unsalted butter, cut into small pieces
  • 2/3 cup heavy cream
  • Coarse sugar, for sprinkling over the cookies
Directions:
  1. Preheat oven to 375°F. Line two baking sheets with parchment paper.
  2. In a small bowl, stir together the strawberries, lemon juice, and 2 tablespoons of the sugar; set aside.
  3. In a large bowl, whisk together the lemon zest and remaining sugar. Rub the zest into the sugar with your fingertips until moist and fragrant.
  4. Add the flour, baking powder, and salt to the zest/sugar mixture and whisk to combine. Using a pastry cutter to cut the butter into the flour mixture until you have coarse crumbs. Add the cream to the bowl and stir until the dough starts to come together, then gently fold in the strawberry mixture.
  5. Use a small cookie scoop (about 1 1/2 tablespoons) to drop dough onto the prepared baking sheet, evenly spaced apart. Sprinkle with coarse sugar. Bake for about 10-15 minutes, or until the cookies are golden brown. Transfer the pans to wire racks and let the cookies cool. The cookies are best the day they’re made, but can be kept in an airtight container for 1 day.

Ingredients{1} 20 oz Can of Crushed Pineapple
2 Tbsp. Cornstarch
2 Eggs Beaten
1 Cup of Sugar
1/2 Cup of Milk
1 Tsp. of Vanilla Extract

Directions
Mix together and pour into a greased baking dish {I used {2} 4″ ramekins}*  sprinkle with cinnamon and cut a few small pieces of butter and place on top. Bake @ 350 for 1 hour.

Ingredients
  • 1 /2 head Cauliflower
  • 1/2 Tbs Coconut Oil
  • 1 tsp Ghee (or 2 tsp butter)
  • Juice and zest from one lime
  • 1/4 cup fresh chopped Cilantro
  • 1/2 tsp Salt
  • Seasonings to taste. I added 1 tsp taco seasoning but it's really up to what you are mixing the rice with.

What to Do
  1. Cut cauliflower into florets and place them in a food processor. Pulse until the cauliflower is a rice like consistency. Set aside.
  2. Melt oil and ghee in a pan over medium heat.
  3. after the fats have been melted about 2 minutes add the riced cauliflower turning to coat.
  4. Saute 5-10 minutes. Yes I know this is a wide range but it depends on the heat of your stove and the freshness of your cauliflower. Taste it at 5 minutes. You are looking for the consistency of rice. Not mushy rice but perfectly cooked rice. (Full disclosure my hubby thought it smelled gross when I was cooking the cauliflower)
  5. When the cauliflower is done add the lime, cilantro, salt, and seasoning. Mix it all together and ta da you're done.

Ingredients
2 cups gluten-free rolled oats  (I used Trader Joe’s, if you can’t find gluten-free, regular old-fashioned rolled oats are fine).
1/3 cup brown sugar + 1 tablespoon for top
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup raspberries (Any berries work).
1/3 cup blueberries
1/2 cup mini chocolate chips
2 cups milk (I used skim).
1 large egg
3 tablespoons butter, melted
2 tablespoons vanilla extract
1 ripe banana, peeled, 1/2-inch slices
Method
1. Preheat oven to 375°F and generously spray the inside of a 10-1/2 by 7 inch baking dish with cooking spray and place on a baking sheet. If you do not have that size-baking dish, a 9 by 13 pan is fine, will be a bit thinner, but just as yummy.
2. In a large bowl, mix together the oats, sugar, baking powder, cinnamon, salt, half the berries and half the chocolate. (Save the other half of berries and chocolate for the top of the oatmeal). In another large bowl, whisk together the milk, egg, butter, and vanilla extract.
3. Add the oat mixture to prepared baking dish. Arrange the remaining berries and chocolate on top. Add the banana slices to the top then pour the milk mixture over everything. Gently shake the baking dish to help the milk mixture go throughout the oats.
4. Bake 35 to 40 minutes or until the top is nicely golden brown and the milk mixture has set. For an extra tasty top, sprinkle a tablespoon or so of extra brown sugar. You can place brown sugar on top before baking or add when casserole is finished baking and broil for a couple of minutes.
5. After it has cooled, cover with plastic wrap and store in fridge. When ready for breakfast, heat in microwave for 1-3 minutes, or until warmed through.





For the chocolate cupcakes: Recipe adapted from Hello, Cupcake!
1 box chocolate cake mix
1 cup buttermilk (instead of water indicated on box)
1/2 cup vegetable oil
4 eggs
- Preheat oven to 350 degrees and line a regular muffin tin with 24 paper liners
- Beat together all of the ingredients for the cupcakes with an electric mixer on medium-high speed for about 2 minutes
- Divide batter evenly among cups and bake for 15-20 minutes, or until cake tester comes out clean
- Allow cupcakes to cool in the tin for at least 5 minutes after they are done, then transfer them to a wire rack to cool completely
For the strawberry buttercream: Recipe adapted from Martha Stewart
3 tbsp strawberry puree (from about 1/2 cup fresh strawberries)
1 cup unsalted butter, firm and slightly cold
3-1/2 cups confectioners’ sugar
1/2 tsp vanilla extract
 - Puree strawberries with a food processor and strain out the seeds by forcing the puree through a fine-mesh sieve
- In the bowl of an electric mixer, beat together butter on medium speed until light and fluffy
- Reduce speed of mixer and slowly add confectioners’ sugar, and beat until well combined
- Add vanilla and strawberry puree, and mix until just blended (If frosting is too thick, add more puree, if it’s too fluid, add more sugar)
- Pipe frosting on cooled cupcakes using a large star tip and top with half a chocolate covered strawberry (see below)
For chocolate covered strawberries:
12 medium-sized strawberries
Chocolate melts
- Cut strawberries in half, keeping the leaves and stems on as much as possible
- Using a double boiler, melt chocolate melts until smooth
- Dip each strawberry half in the chocolate and place on a tinfoil-lined baking sheet to dry
- Once chocolate is set, place one strawberry half on each cupcake
