Ingredients
- 1 /2 head Cauliflower
- 1/2 Tbs Coconut Oil
- 1 tsp Ghee (or 2 tsp butter)
- Juice and zest from one lime
- 1/4 cup fresh chopped Cilantro
- 1/2 tsp Salt
- Seasonings to taste. I added 1 tsp taco seasoning but it's really up to what you are mixing the rice with.
What to Do
- Cut cauliflower into florets and place them in a food processor. Pulse until the cauliflower is a rice like consistency. Set aside.
- Melt oil and ghee in a pan over medium heat.
- after the fats have been melted about 2 minutes add the riced cauliflower turning to coat.
- Saute 5-10 minutes. Yes I know this is a wide range but it depends on the heat of your stove and the freshness of your cauliflower. Taste it at 5 minutes. You are looking for the consistency of rice. Not mushy rice but perfectly cooked rice. (Full disclosure my hubby thought it smelled gross when I was cooking the cauliflower)
- When the cauliflower is done add the lime, cilantro, salt, and seasoning. Mix it all together and ta da you're done.
