Wine-Poached Pears- 2 Bosc or Anjou pears, peeled, cored and quartered

Pear Cake- 2 cups peeled, shredded, drained, and pressed pears (about 2 large cooking pears)

- 1 teaspoon baking soda

- 1/2 teaspoon freshly grated nutmeg
Roasted Almonds- 1/2 cup whole almonds
- 1/2 teaspoon unsalted butter
- 1/2 teaspoon kosher salt
